According to your fifth definition that I have quoted above, Enterprise software or an Enterprise Licence is intended to give a company-wide solution. As per the OP's dictionary definition, the "Project or Undertaking" in the cases quoted through the OP is a company.
A company-wide solution means that it will likely be used wherever a company has an office, or perhaps a site. So an Enterprise license will provide a solution for all of a company's sites. This can be different to some Site license, which would only cover one location owned by a company, instead of all of them. Anther use of the term Enterprise is merely to point an entire company, and isn't just limited in definition to something software related. Thus you can have software,[link widoczny dla zalogowanych], HR or Accounting, or perhaps a supply of Jelly Beans for "The Enterprise". When utilized in either case, the word Enterprise in relation to the size of a company isn't relevant, because it applies equally to a small business, because it does to a megacorp.

In my opinion, the term "enterprise" inside a software setting usually describes software being written for any large corporation. Additionally, it often describes internal software, instead of client-facing software.
This may seem like an arbitrary line to draw (not to mention, what exactly is "large"), but having written software for a number of different types of companies, I can tell you the needs of huge businesses is extremely dissimilar to the needs of small companies, that is again different towards the needs of people.
Issues that are often irrelevant (or rather, not worth investing in) for many small companies include:
High availability / seamless failover
Redundancy / disaster recovery
Privacy of customer data
Compliance to laws and regulations
Realtime monitoring,[link widoczny dla zalogowanych], rich trace info for troubleshooting
An emphasis on reporting (typically allowing for intelligent management)
I would hazard a reckon that the reason being the overheads and profits of a big company take presctiption a completely different scale to some large company.
